Fulton Boiler Works has supplied and installed a reconditioned gas-fired Series 50J vertical steam boiler for a new shellfish cooking line at the Devon-based Blue Sea Food Company The cooking vessel is digitally controlled to ensure that shellfish are cooked at the optimum temperature for the correct amount of time

Steam from the boiler feeds an open system to heat water for the main conveyor cooker and a closed system for pasteurising and cooking small batches.

It also provides heated water for a box washer.

Commenting on the choice of boiler, Blue Sea director Richard Chatfield says: "We were originally intending to stagger the purchase and install two 30J boilers to anticipate an increase in production, but Fulton was able to offer us a reconditioned unit.

Fulton boilers were recommended by the father of our managing director who had also used them for his steam supply." Blue Sea claims that the taste of its shellfish - which is served in many Michelin star restaurants in London - is unique because the company uses only the finest and freshest Devon crab, which is prepared locally at its modern purpose-built facility in Brixham.

Says Richard: "We are the only company in the world using a special technique which prepares live shellfish through stunning.

The technique, is not only humane, but also enhances the meat quality by ensuring that the shellfish remains whole throughout the cooking process." Thanks to the freshness of the shellfish, the quality of the cooking process and the strict hygiene and cleaning procedures adopted within the facility, Blue Sea's fresh crabmeat has a six day shelf life - far longer than the norm.

The renowned 'J' Series vertical gas and oil fired steam boilers include eight models covering outputs from 96 to 960 kg/h.

Their tubeless design, invented by Fulton, eliminates the coils and tubes traditionally used in steam raising plant and enables the boiler to raise its full steam output in just 20 minutes.

The simple design and robust construction from top quality materials make them ideal for arduous applications in a wide range of industries.
