The Tetra Tebel OST 6 is a horizontal tank for producing curd for most cheese types.
It has all required functions for a controlled and predictable process, including cutting, blending, whey discharge, water addition, indirect heating and cooling, emptying and CIP (Cleaning in Place).

Central to heating issues in cheese making is controlling the temperature difference between the heating media and the product.
In the OST 6, warm process water for quick and controlled heating rates can be fed and distributed directly into the tank.
The curd/whey mixture also can be heated indirectly, by circulating hot water in the new dimple jacket on the OST 6.
This dimple technique creates higher turbulence inside the walls, increasing the heating rate, ensuring optimal heat transfer between heating medium and the product and improving the overall energy performance.
Using warm water to heat the product results in controlled heating at lower temperature differences (i.e wall temperature) and accelerated heating rates.
This prevents the product from being damaged by high temperatures and minimises fouling.
The gentle heating process in the OST 6 leads to increased curd yield, and avoids off-flavouring or lump formation caused by over cooking.
The new dimple jacket is also designed to withstand high heat stress forces and deformations during intense heating and CIP sequences.
Increased Performance.
The Tetra Tebel OST 6 combines a reliable drive unit, optimised cutting tools and new software-based functions, which enable predictable curd size distribution and excellent cheese quality, tailored to the customer's specific cheese recipes.
The patented stirring and cutting tools are designed to deliver the highest yield with the lowest losses of fat and fines: test results show fat losses in the whey can be reduced by up to 20 per cent.
A further benefit of the cutting tool design is that minimal curd remains on the knives after the tank is emptied, thus reducing the volume of water needed to flush the tank.
High hygiene standards, with the shortest CIP.
The Tetra Tebel OST 6 curd making vat is cleaned in place by special rotating spray nozzles and a connection to the shaft seal housing, making CIP time as short as possible.
The OST 6 has been designed with a strong focus on hygiene, to comply with the latest laws and regulations.
This means all rubbers and plastics have the necessary food grade certificates, securing food safety.
The proven, patented hygienic Q-seal design and external bearing are now standard features on the vat.
As a result of eliminating the internal bearing, the inside of the cheese vat has fewer places where product can adhere, which results in longer runs between CIP.
Reduced cleaning time is also achieved by a combination of the improved design on the whey sieve, the finish of the main shaft and a high level of automation.
All this lowers the impact on the environment by using less detergent, minimising wastewater and therefore reducing operational cost..
Improved Process Control.
Curd making in Tetra Tebel OST 6 vats is managed from the new control panel, using a freely selectable recipe structure and increased functionality.
New functionalities in the control panel, with its new user interface and new design, all combine to achieve better process control, more efficient production and deliver better management information.
