The latest hot oil separation system from Westfalia Separator solves the problem of how to clean the oil during cooking.

It is well known that fried products are only as good as the oil that is used because the peanuts, battered meat snacks or potatoes being fried constantly release particles into the oil so it has to be changed regularly.

With quantities of 1000 - 10000 litres of oil in use and frequently needing to be disposed of, the problem can be expensive for food processors not using the Westfalia Separator continuous hot oil separation technology.

The patented Westfalia Separator system is specially designed to handle this problem offering cost savings on the resulting lower quantities of oil used, less oil for disposal and the reduction of frequent oil changes.

As volume frying of food products is a continuous process the Westfalia Separator hot oil separation system is also a continuous process.

Capable of separating oil at 160C, normal frying temperature, or hotter, there is no need for cooling of oil prior to separation.

Therefore oil in the fryer requires minimal energy input to maintain the optimum frying temperature.

Equipped with the Westfalia Separator HydroStop ejection system waste discharge can be precisely adjusted to ensure that the oil content in the discharged solids is minimal with reciprocated cost benefits.

Results from a peanut frying installation illustrate the advantages of the system with the quality of the oil remaining high and the quality of the fried products maintaining a consistent high food standard quality.

The oil is continuously recycled in a bypass arrangement through the Westfalia Separator in a closed circuit, with positive advantages regarding safety and cleaning.

With a capacity of 4000 to 5000l/h this separator cleans the entire volume of oil several times per hour.

Since the installation of the separator nearly a year ago, only the oil that is discharged with the fried peanuts has had to be replaced.

Previously the complete oil bath had to be emptied, disposed of and re-filled every two weeks.

The high cooking temperature means that even purified oil ages at some time, the separator can then, at the turn of a valve, discharge this into a tank rather than back into the installation for purification and use for generating power or as a fuel or for generating steam in steam boilers.

Without this pre-treatment the waste oil would not be as suited for use in bio-diesel processes.
